Shrimp Avo Boats

Clean Coastal Bite | Fresh, Zesty, and Full of Healthy Fats

These are light, zesty, and nutrient-dense. Think of them as ceviche’s low-effort cousin: no frying, no bread, just clean, crisp flavor in every bite. Ideal for warm days, post-workout meals, or light dinners.

Ingredients (Serves 2–3)

Base:

  • 1 head romaine lettuce or butter lettuce, leaves separated and washed

  • 8 oz wild-caught shrimp, peeled & deveined (or substitute with 1 can wild-caught tuna, drained)

Veggie Mix:

  • 1 ripe avocado, diced

  • ½ cup cherry tomatoes, halved or quartered

  • ¼ cup red onion, finely chopped

  • 1–2 tbsp fresh cilantro, chopped

  • 1 tbsp extra virgin olive oil

  • Juice of 1 lime

  • Pinch of Baja Gold salt

  • Optional: jalapeño, finely diced for a kick

Instructions

  1. Cook the Shrimp:
Lightly sauté shrimp in olive oil with a pinch of salt until just pink (about 2–3 minutes per side). Let cool slightly and chop if desired.

  2. Make the Mix:
In a bowl, combine cooked shrimp (or tuna), avocado, tomatoes, onion, cilantro, olive oil, lime juice, and salt. Gently toss to coat.

  3. Assemble the Boats:
Scoop the mixture into each lettuce leaf. Serve chilled or at room temp.

  4. Optional Toppings:

    • Sprinkle of hemp seeds or chia seeds for extra protein & omega-3s

    • Microgreens or thin-sliced radish for crunch

    • Dash of smoked paprika or hot sauce for a twist

Why It Works

  • Shrimp/Tuna: Lean, clean protein

  • Avocado: Healthy fats that keep you satisfied

  • Lime + Cilantro: Bright, fresh flavor

  • Romaine: A crisp, low-carb vessel
