A Sanadi Classic | Baked, Nourishing, and Comforting Without Compromise

This isn’t just a cleaner version of a comfort food favorite. It’s a nourishing, protein-rich take on a classic. Baked eggplant, rich tomato sauce, and real cheese layered with love… plus the option to level it up with collagen-rich bone broth and protein-packed ground turkey for deeper nourishment.

Ingredients (Serves 4)

For the Eggplant:

  • 1 large organic eggplant, sliced into ½-inch rounds

  • 1 tsp Baja Gold salt

  • ¾ cup cassava flour or almond flour

  • 2 pasture-raised eggs, beaten

  • ½ tsp garlic powder

  • ½ tsp oregano

  • 1 tbsp avocado oil or ghee

For the Sauce:

  • 1 ½ cups organic crushed tomatoes (Jovial, Bianco DiNapoli, etc.)

  • 2 tbsp tomato paste

  • 2 cloves garlic, minced

  • ½ tsp onion powder

  • ½ tsp dried basil

  • 1 tbsp extra virgin olive oil

  • Salt + pepper to taste

  • Optional Add-Ons:

    • ½ cup grass-fed bone broth (for extra richness)

    • ½ lb ground turkey, sautéed and folded into the sauce for protein

For the Cheese Layers:

  • ¾ cup raw or grass-fed mozzarella, shredded

  • ½ cup raw or aged parmesan

  • Optional: ¼ cup sheep’s milk ricotta or dairy-free ricotta if sensitive

To Finish:

  • Fresh basil leaves

  • Drizzle of extra virgin olive oil

Instructions

  1. Prep Eggplant: Salt slices and let sit 30–40 mins to release moisture. Pat dry.

  2. Bread & Bake: Coat in egg + flour mixture. Bake at 400°F for 25–30 mins, flipping once, until golden.

  3. Make the Sauce: Sauté garlic in olive oil. Add tomato paste, crushed tomatoes, and spices. Simmer 10–15 mins.

    • If using bone broth, stir it in and simmer another 5–10 mins to reduce.

    • If using ground turkey, brown it separately in a skillet and fold into sauce.

  4. Assemble: Layer sauce, baked eggplant, mozzarella, parmesan (and optional ricotta). Repeat layers.

  5. Bake Again: Cover and bake at 375°F for 20 mins. Uncover and broil 3–5 mins until bubbly and golden.

  6. Serve: Garnish with fresh basil and a light olive oil drizzle. Let sit 5 mins before cutting.
